A constant relative humidity, ideally between 75 – 85%, should be maintained in barrel storage rooms to:
- reduce evaporation losses of wine
- minimize topping up volumes and the workload involved in topping up
- preserve wine quality through minimized topping up
- prevent drying, cracking and leaks in barrels
